Gluten-Free Almond Flour Cookie Dough Recipe

**Warning! If you do not like your kiddos to make messes, this is not for you! Consider having your vacuum handy and some wipes to clean up your countertops afterwards. Kiddos will also need to have hands washed from playing with/eating the cookie dough!

This is an easy-peasy recipe for kiddos (or adults alike!) to make something delicious, have a little fun, and make a little mess!

Ingredients

  • 3 tablespoons of almond flour OR heat-treated flour (microwave the flour for 30-45 seconds making sure it doesn’t burn)
  • 1 tablespoon of white sugar
  • 1 tablespoon for dark brown sugar
  • 1-1.5 tablespoons of softened butter (leave it out for 1hour or soften stick in microwave for 10 seconds)
  • 1/8 teaspoon of vanilla extract
  • 1 pinch of salt (to taste)
  • 1 tablespoon of almond milk (or milk of your choice. Water also works!)

Instructions

  1. Add white and brown sugar and butter to a bowl and start whisking it together to until it becomes a smooth consistency (sugar clumps can be broken down by hand!)
  2. Add milk, salt, and vanilla extract and whisk it again
  3.  Add almond flour and mix now with a spatula. Consistency should start looking like cookie dough and be able to take shape. You can add more flour if it’s too wet or add more milk if too dry.
  4. Add and fold in with spatula any fun add-ins! Chocolate chips are a household favorite but also consider: mini M&Ms or sprinkles!
  5. This can be frozen in airtight container (or make small pieces *think tiny marshmallow size* and place them on top of parchment paper and freeze before placing them in ziplock bags!  These can be added to ice cream or other snacks for a cookie dough add in!)
    • Pro tip: you can add a bit more flour to them to make them a bit harder so it can hold its shape.
